Just thought I'd share a good recipe with you, as I enjoyed it this evening:


* Preheat oven to Gas Mark 7 (200°C)
* Cut slices of butternut squash just under a centimetre wide
* Peel them, remove any seeds, and cut into wedges
* In a bowl, coat them in a little oil (the low calorie spray oil is ideal for this), and season with salt, pepper and paprika (smoked paprika if you can get it - it adds just that bit extra), mixing well to ensure an even coating
* Put the wedges onto a baking tray/tin and bake for 20-30 minutes, until soft and browned

They do make a good substitute for chips if you're not a potato fan :-)

Ooh, perfect serendipity! I was wondering what to do with a small butternut squash that arrived in my veg box! Thank you!

Mmmmm.. hadn't thought of smoked paprika! I do this with either butternut squash or with sweet potatoes, only instead of the low-cal cooking spray, I use 1 Tablespoon olive oil mixed with one teaspoon of toasted sesame oil, and for the paprika I substitute a pinch of garlic powder. I did it once with a pinch of curry powder, instead, and it was tasty but didn't quite work as a side for the main dish (rosemary chicken, if memory serves?)

I don't think I've ever seen a butternut squash in real life, but this actually works with potatoes just as well :o)
AF's sister has celiac disease and so we make the wedges this way when she visits us, because potato wedges you can buy have always wheat flour listed as ingredient.
